Sometimes, life calls for cheese. Lots of cheese. Golden, bubbly, cheese and garlic and bread. That's what this dip is all about. It's one of the best excuses ever to eat cheese. I took this dip to my church's small group and it vanished in a very short time. Everyone loved it, and the other day, my best friend asked me to make her this dip for lunch! (I didn't, because I care about her arteries and overall health.) Make sure you have other people around once this dip comes out of the oven. It is simply irresistible! :)
The first thing you gotta do is roast the grape tomatoes. Slice them all in half, sprinkle them with salt, drizzle them with olive oil and bake them for 12-17 minutes at 425 degrees.
Next, mix all the cheese together, along with the garlic and spices. Spread all that glory over the tomatoes. Sprinkle with parmesan and drizzle with olive oil.
Bake for 20-22 minutes until golden and bubbly. Serve immediately with crackers or toasted bread. Enjoy!
Caprese Pizza Dip

- 1 pint (2 cups) grape tomatoes, halved
- Olive oil
- 2 cloves garlic, minced
- 8 oz cream cheese, softened
- 10 oz shredded mozzarella
- ¼ cup + 2 tbsp grated parmesan
- Italian seasoning to taste
- Salt and pepper to taste
- Something to serve it with! (crackers, toasted bread, etc.)
Directions:
- Preheat oven to 425 degrees.
- Line a baking sheet with aluminum foil and place tomato halves on top. Drizzle with olive oil and salt. Bake for 12 – 17 minutes. Place tomatoes at the bottom of a baking dish once roasted.
- Mix cream cheese with mozzarella and ¼ cup parmesan. Stir in italian seasoning, garlic, salt, and pepper.
- Spread the cheese mixture on top of the tomatoes, pressing down so it fits the baking dish. Sprinkle with remaining parmesan and drizzle 1 tbsp oil on top.
- Bake for 20 – 22 minutes, or until top is golden and bubbly.
- Serve with something like crackers or toasted bread immediately, while the cheese is fully melted.
