Sometimes, life calls for cheese. Lots of cheese. Golden, bubbly, cheese and garlic and bread. That's what this dip is all about. It's one of the best excuses ever to eat cheese. I took this dip to my church's small group and it vanished in a very short time. Everyone loved it, and the other day, my best friend asked me to make her this dip for lunch! (I didn't, because I care about her arteries and overall health.) Make sure you have other people around once this dip comes out of the oven. It is simply irresistible! :)
Those who know me well are aware of the fact that one of my favorite "food genres" is Tex-Mex. When I'm browsing through recipes in Pinterest and I see a combination of black beans, corn, peppers, onions and cheese, I usually cannot resist pinning the recipe. Those are some of my favorite ingredients and these taquitos have them all and more. Why should you make them? Here's four reasons:
Oh the wonders of cheese. Cheddar, parmesan, mozzarella, swiss, cream cheese, gouda, muenster... I love 'em all! This pizza has FOUR types of cheese, each playing an important role. The parmesan and cream cheese make the alfredo sauce super creamy. The goat cheese adds that incomparably awesome salty bite and the mozzarella binds all of it together, both texture and flavor-wise. Plus, the alfredo sauce recipe makes for a lighter version than the typical alfredo, so I think this pizza is a great transition between all those calorie-laden meals we had during the holidays and all the healthy foods we'll be eating from now on...
Ok, this exquisite pizza doesn't need much justification, so that ridiculous argument works fine! :D On to the recipe! I thought chicken parmesan couldn't be improved. Keep in mind that the words I'm about to say are reserved for only a few particular incidences and are usually very hard for me to utter, but this deserves them: I WAS WRONG. I have made my fair share of chicken parmesan recipes, but none can compare to this one. Upon tasting it my brother said it was better than any he's ever had in restaurants (he orders the dish everywhere) and my mom simply predicted that my marriage to whoever I marry was going to be a happy one. The homemade marinara sauce is so rich and tasty and the goat cheese gives it a delightful creaminess. The three-step breading process protects the chicken breast from drying out and makes for the juiciest chicken parmesan ever. Find an excuse to make this. It could be your second cousin's birthday, your 53rd date, your little sister's A in spanish class, or your turtle's quinceañero, whatever you want! Just make it. It is extraordinarily delicious!
The original plan was to make some vegetarian Butternut Squash and Spinach Lasagna Rolls that I found on Skinny Taste. The problem was that when I went to the supermarket the only butternut squash they had weighed 5 FREAKIN' POUNDS! I had never seen such a squash! I used that as an excuse to buy sweet potato instead and add sausage, thus shooting the "vegetarian" tag out into space. If you love sweet potato this dish is for you! The creamy sauce is packed with sweet potato flavor and a nice salty hint from the parmesan cheese. The tiny spinach leaves add pops of vibrant green color in the velvety ricotta mixture. It totally falls under the category of comfort food, but it is pretty enough to make for guests. And now for the fun part!
