Happy New Year everyone!!! Although the Christmas season may be over in the U.S., this simply ain't so in Puerto Rico. There's still Three Kings' Day or El Día de los Reyes in January 6th! And what better way to celebrate than with this deliciously simple cake? Even if you don't celebrate Three Kings' Day, this moist and tasty cake is perfect for any special occasion, or just for sticking in the fridge and eating a piece a day for a week. I'm not helping with those New Year resolutions, right? :D Don't worry. Healthier recipes will be coming soon. But for now, I hope you enjoy this delightful dessert.
Howdy there! I know, I know... It's been so sooo SOOOO long since I post a recipe. Thank my finals for that! They were INTENSE. But then again, so is this cake. And contrary to my academic plight, this Snickers Cake is delightful! It generated similar reactions to my pumpkin cake-- reactions that a chocolate box cake mix could never ever dream to produce! This cake is the biggest cake I've ever made and it is also the most complicated. But never fear! Just take it one step at a time (caramel, cake, filling, frosting, assembly and ganache) and at the end it will be worth it. This is not a last-minute cake though. It will take from morning to late afternoon to make. Also, seeing as the ingredient list is quite long, I suggest getting a few of your friends to pitch in and even help if you want. Look at that beautiful anatomy! Accept the challenge? ;)

This cake. Oh, this cake. It's like autumn incarnated! I made it for a dinner party in my house and nobody could remain silent after taking the first bite. A chorus of heartfelt OMG's resounded in my kitchen. When I tasted it I reached the conclusion that I can't imagine a better pumpkin cake. It's so moist and fluffy and the frosting... You can just go ahead and eat it with a spoon. Don't get creative with this one and change the frosting! At least not the first time. Give it a try. I honestly think you won't regret it. :) |
