When cooking, I have a philosophy that homemade is always best. This marinara sauce is no exception! Packed with onion, garlic, and spices, it is so flavorful and you can use it in any recipe that calls for a jar of this classic sauce, such as my Goat Cheese Chicken Parmesan. While tasting it, please make sure you're wearing socks so that you can honestly say it knocked your socks off... Let's proceed.
The first thing you should do is puree the tomatoes in a blender or food processor until they are perfectly smooth and lovely.
Next add the onions and garlic and puree again. I used the frappé option in my blender to do this. No, adding ice to make a tomato, onion, and garlic frappé never crossed my mind. I promise.
After those two wonderful ingredients have entered the party, add one tablespoon of olive oil to a medium sized sauce pan and pour the whole tomato mixture in. Add the oregano, parsley, salt, pepper, sugar, and bay leaf and combine. You should wear a chef hat, just to accentuate the chef-y feeling you're probably having by this moment.
Once the sauce is simmering, simply cover and lower heat. Let it work its magic for about 20 minutes and then give it a taste. (Remember the socks!!!)

Homemade Marinara Sauce
Ingredients:
- 2 (14.5 oz) cans of petite diced tomatoes (I used Hunt's.)
- 1 small yellow onion, chopped
- 3-4 garlic cloves, minced
- 1 tbsp olive oil
- 1/2 tsp oregano
- 1 tbsp fresh parsley
- 1 tsp salt
- 1/2 tsp pepper
- 3 pinches of sugar
- 1 bay leaf
- Puree the tomatoes in a blender or food processor until smooth.
- Add onion and garlic and puree again.
- Add tablespoon of olive oil to a medium sized sauce pan and pour tomato mixture in. Set heat to medium.
- Add oregano, parsley, salt, pepper, sugar, and bay leaf.
- When it starts to simmer, cover and lower heat to med low and simmer for 20 minutes.
- Taste and adjust salt and pepper if necessary.
